Description

A hearty and flavorful vegetable lasagna packed with fresh ingredients and cheese.


Ingredients

  • 9 lasagna noodles
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 zucchini, sliced
  • 1 bell pepper, chopped
  • 2 cups fresh spinach
  • 2 cups marinara sauce
  • 2 cups ricotta cheese
  • 2 cups mozzarella cheese, shredded
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook lasagna noodles according to package instructions.
  3. In a large skillet, heat olive oil over medium heat.
  4. Add onion and garlic, sauté until fragrant.
  5. Add zucchini and bell pepper, cook until tender.
  6. Add spinach and cook until wilted.
  7. In a baking dish, spread a layer of marinara sauce.
  8. Layer three lasagna noodles over the sauce.
  9. Spread a layer of ricotta cheese over the noodles.
  10. Add a layer of sautéed vegetables.
  11. Sprinkle with mozzarella cheese.
  12. Repeat the layers until all ingredients are used, ending with a layer of noodles topped with marinara and mozzarella.
  13. Sprinkle Parmesan cheese on top.
  14. Cover with foil and bake for 30 minutes.
  15. Remove foil and bake for an additional 15 minutes until cheese is bubbly.
  16. Let it rest for 10 minutes before serving.

Notes

For a spicier kick, add red pepper flakes to the vegetable mixture.
