Description

This brown rice pilaf with toasted almonds, nutty rice, sweet shallots, and parsley is a delicious side dish.


Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 2 tablespoons chopped shallots
  • 1 garlic clove (minced)
  • 1½ cups instant brown rice
  • 1 cup vegetable broth
  • salt and freshly ground black pepper (to taste)
  • ¼ cup sliced almonds (toasted)
  • 1 tablespoon chopped fresh parsley

Instructions

  1. Heat olive oil and butter in a nonstick pan over medium heat. Add chopped shallots and saute for 1 minute or until crisp-tender. Add garlic and saute for 20 seconds, or until fragrant.
  2. Stir in rice and continue to cook for 1 minute. Add vegetable broth, salt, and pepper. Bring mixture to a boil; reduce heat and simmer for 10 minutes, or until liquid is absorbed.
  3. Remove from heat and add toasted almonds and parsley; stir and fluff with a fork. Taste for seasonings and adjust. Serve.
