- 4 medium sweet potatoes, fat and wide for easy stuffing
- 1 red apple, diced into ½-inch pieces
- 1 tablespoon lemon juice
- ½ cup unsalted butter, cut into cubes
- ¼ cup + 2 tablespoons dark brown sugar, packed and divided
- ¼ cup chopped pecans
- ½ teaspoon coarse kosher salt
- ½ teaspoon ground cinnamon, divided
- ¼ teaspoon ground nutmeg
Instructions
- Heat to 400°F (200°C). Scrub and pierce sweet potatoes with a fork, then place on a rimmed baking sheet.
- Roast for 45–60 minutes until tender and easily pierced with a fork.
- Dice apple into ½-inch pieces, toss with lemon juice to prevent browning, and set aside.
- Once baked, slice each sweet potato down the center and scoop most of the flesh into a large bowl, leaving ¼-inch around the edges. Add diced apples, butter, ¼ cup brown sugar, pecans, salt, ¼ tsp cinnamon, and nutmeg. Mix until combined but still chunky.
- Spoon the mixture back into the skins, mounding slightly.
- In a small bowl, mix remaining 2 tbsp brown sugar with ¼ tsp cinnamon. Sprinkle over each stuffed potato.
- Return to the oven for 20 minutes until warm and lightly caramelized on top. Let cool 5 minutes before serving.
