Description

This Apple Spiced Stuffed Sweet Potatoes Recipe combines roasted sweet potatoes with tart apples, brown sugar, and warm spices for the ultimate cozy fall side dish.


Ingredients

  • 4 medium sweet potatoes, fat and wide for easy stuffing
  • 1 red apple, diced into ½-inch pieces
  • 1 tablespoon lemon juice
  • ½ cup unsalted butter, cut into cubes
  • ¼ cup + 2 tablespoons dark brown sugar, packed and divided
  • ¼ cup chopped pecans
  • ½ teaspoon coarse kosher salt
  • ½ teaspoon ground cinnamon, divided
  • ¼ teaspoon ground nutmeg

Instructions

  1. Heat to 400°F (200°C). Scrub and pierce sweet potatoes with a fork, then place on a rimmed baking sheet.
  2. Roast for 45–60 minutes until tender and easily pierced with a fork.
  3. Dice apple into ½-inch pieces, toss with lemon juice to prevent browning, and set aside.
  4. Once baked, slice each sweet potato down the center and scoop most of the flesh into a large bowl, leaving ¼-inch around the edges. Add diced apples, butter, ¼ cup brown sugar, pecans, salt, ¼ tsp cinnamon, and nutmeg. Mix until combined but still chunky.
  5. Spoon the mixture back into the skins, mounding slightly.
  6. In a small bowl, mix remaining 2 tbsp brown sugar with ¼ tsp cinnamon. Sprinkle over each stuffed potato.
  7. Return to the oven for 20 minutes until warm and lightly caramelized on top. Let cool 5 minutes before serving.
