- 4 boneless (skinless chicken breasts)
- Salt (to taste)
- Freshly ground black pepper (to taste)
- 1 teaspoon garlic powder
- 1 to 2 tablespoons olive oil
- 8 slices bacon (cooked and crumbled)
- 1 small shallot or ½ small onion (thinly sliced)
- 1 cup fresh or jarred cranberries (or rehydrated dried cranberries)
- 1 to 1½ cups brie cheese (sliced or cubed)
- Optional: fresh thyme or parsley for garnish
Instructions
- Season chicken breasts on both sides with salt, pepper, and garlic powder.
- Heat olive oil in a skillet over medium-high heat; sear chicken until golden, about 4 to 5 minutes per side.
- Transfer seared chicken to a baking dish.
- In the same skillet, add more oil if needed and sauté shallots or onions until softened.
- Add cranberries to the skillet and cook briefly until they begin to soften.
- Place the sautéed cranberry mixture evenly over each chicken breast in the baking dish.
- Top each chicken breast with sliced or cubed brie and sprinkle crumbled bacon on top.
- Bake in a preheated 375°F oven for 15 to 20 minutes, until chicken is fully cooked and brie is melted and bubbly.
- Garnish with fresh thyme or parsley if desired, and serve warm.
