- ¼ cup sugar
- 6 tbsp melted butter
- 16 oz cream cheese (softened)
- ⅔ cup sugar
- 1 tsp vanilla extract
- 1 cup whipped topping or whipped cream
- 2 cups fresh strawberries (sliced)
- 2 –3 tbsp sugar
- 1 –2 tsp lemon juice (optional)
Instructions
- Combine graham cracker crumbs, sugar, and melted butter in a bowl until mixture is uniform.
- Press the crust mixture firmly into the bottom of a 9×9-inch pan and chill in the fridge.
- Beat softened cream cheese with sugar and vanilla extract until smooth and creamy.
- Fold in whipped topping gently until well combined.
- Spread cheesecake filling evenly over the chilled crust and smooth the surface.
- Toss sliced strawberries with sugar and optional lemon juice, then let rest a few minutes to macerate.
- Spread the strawberry topping evenly over the cheesecake layer.
- Refrigerate the assembled bars for at least 3 to 4 hours or overnight until set.
- Slice into bars and serve chilled.
