Ingredients

  • 16 oz cream cheese (softened)
  • ⅔ cup sugar
  • 1 tsp vanilla extract
  • 1 cup whipped topping or whipped cream
  • 2 cups fresh strawberries (sliced)
  • 23 tbsp sugar
  • 12 tsp lemon juice (optional)

Instructions

  1. Combine graham cracker crumbs, sugar, and melted butter in a bowl until mixture is uniform.
  2. Press the crust mixture firmly into the bottom of a 9×9-inch pan and chill in the fridge.
  3. Beat softened cream cheese with sugar and vanilla extract until smooth and creamy.
  4. Fold in whipped topping gently until well combined.
  5. Spread cheesecake filling evenly over the chilled crust and smooth the surface.
  6. Toss sliced strawberries with sugar and optional lemon juice, then let rest a few minutes to macerate.
  7. Spread the strawberry topping evenly over the cheesecake layer.
  8. Refrigerate the assembled bars for at least 3 to 4 hours or overnight until set.
  9. Slice into bars and serve chilled.
