Description

Savory quesadillas filled with tender BBQ chicken and melty cheese, perfect for quick lunches, dinners, or snacks with optional spicy and fresh toppings.


Ingredients

  • 2 cups cooked chicken (shredded or diced)
  • ½ to ¾ cup BBQ sauce (adjust to taste)
  • to 2 cups shredded cheese (cheddar, Monterey Jack, or blend)
  • 8 flour tortillas (8-inch size)
  • 1 small red onion (thinly sliced, optional)
  • Butter or oil (for cooking)
  • Optional toppings: sliced jalapeños, cilantro, or green onions

Instructions

  1. In a mixing bowl, combine the cooked chicken with BBQ sauce until evenly coated.
  2. Lay one tortilla flat and sprinkle shredded cheese over half of it, then add a portion of the BBQ chicken mixture on top of the cheese.
  3. Add more cheese over the chicken as desired, then fold the tortilla over to enclose the filling.
  4. Heat a skillet over medium heat and add butter or oil.
  5. Place the folded quesadilla in the skillet and cook for 2–3 minutes until the bottom is golden and cheese starts to melt.
  6. Flip the quesadilla and cook the other side until golden and cheese is fully melted.
  7. Repeat the cooking process with remaining tortillas and filling.
  8. Cut quesadillas into wedges and serve warm with extra BBQ sauce, sour cream, or favorite dipping sauce.
