  • 1 lb beef sirloin, thinly sliced
  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 2 cups mushrooms, sliced
  • 2 cloves garlic, minced

  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Dijon mustard
  • 1 cup sour cream
  • Salt and pepper, to taste
  • 8 oz egg noodles
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Bring a large pot of salted water to a boil. Add the egg noodles and cook according to package instructions. Drain and set aside.
  2. In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the sliced beef and cook until browned, about 3-5 minutes. Remove the beef from the skillet and set aside.
  3. In the same skillet, add the remaining tablespoon of olive oil. Add the diced onions and sliced mushrooms. Sauté until the onions are translucent and the mushrooms are tender, about 5-7 minutes.
  4. Stir in the minced garlic and cook for an additional minute until fragrant.
  5. Pour in the beef broth, Worcestershire sauce, and Dijon mustard. Stir well to combine. Allow the mixture to simmer for about 5 minutes.
  6. Return the cooked beef to the skillet. Stir to combine and cook for another 2-3 minutes until the beef is heated through.
  7. Reduce the heat to low and gently stir in the sour cream. Mix until the sauce is creamy and well combined. Season with salt and pepper to taste.
  8. Add the cooked egg noodles to the skillet. Toss everything together to ensure the noodles are well coated in the sauce.
  9. Remove from heat and garnish with freshly chopped parsley. Serve hot.
