- 1 lb beef sirloin, thinly sliced
- 2 tablespoons olive oil
- 1 medium onion, diced
- 2 cups mushrooms, sliced
- 2 cloves garlic, minced
- 1 cup beef broth
- 1 tablespoon Worcestershire sauce
- 1 teaspoon Dijon mustard
- 1 cup sour cream
- Salt and pepper, to taste
- 8 oz egg noodles
- Fresh parsley, chopped (for garnish)
Instructions
- Bring a large pot of salted water to a boil. Add the egg noodles and cook according to package instructions. Drain and set aside.
- In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the sliced beef and cook until browned, about 3-5 minutes. Remove the beef from the skillet and set aside.
- In the same skillet, add the remaining tablespoon of olive oil. Add the diced onions and sliced mushrooms. Sauté until the onions are translucent and the mushrooms are tender, about 5-7 minutes.
- Stir in the minced garlic and cook for an additional minute until fragrant.
- Pour in the beef broth, Worcestershire sauce, and Dijon mustard. Stir well to combine. Allow the mixture to simmer for about 5 minutes.
- Return the cooked beef to the skillet. Stir to combine and cook for another 2-3 minutes until the beef is heated through.
- Reduce the heat to low and gently stir in the sour cream. Mix until the sauce is creamy and well combined. Season with salt and pepper to taste.
- Add the cooked egg noodles to the skillet. Toss everything together to ensure the noodles are well coated in the sauce.
- Remove from heat and garnish with freshly chopped parsley. Serve hot.
