Description

Birthday Cake Cookies inspired by Crumbl combine rich black cocoa, crushed Oreos, and cream cheese buttercream frosting for a festive treat.


Ingredients

  • 10 Oreo cookies, finely crushed
  • 1 1/4 cup all-purpose flour
  • 1 tbsp cornstarch
  • 1/4 cup black cocoa powder
  • 1/2 tsp baking soda
  • 1/4 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1/4 cup Imperial Sugar granulated sugar
  • 1/2 cup Imperial Sugar brown sugar (dark or light)
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/2 tsp cake batter extract (optional)
  • 1/4 stick (2 tbsp) unsalted butter, softened
  • 4 oz cream cheese, softened
  • 1 cup Imperial Sugar powdered sugar
  • 1 tsp vanilla extract
  • 4 Oreo cookies, finely crushed
  • 2 tbsp cream cheese, softened
  • Rainbow sprinkles, as desired

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Finely crush 10 Oreo cookies and combine with flour, cornstarch, black cocoa powder, baking soda, baking powder, and salt in a bowl.
  3. In a stand mixer, beat softened butter, brown sugar, and granulated sugar until light and creamy.
  4. Add egg, vanilla extract, and cake batter extract to the mixture and mix until combined.
  5. Gradually add the dry ingredients to the wet ingredients and mix until a cohesive dough forms.
  6. Portion out 8 equal dough balls, flatten each to about 1 inch thick, and freeze for 15 minutes.
  7. Bake cookies for 11 minutes and let them cool completely on the baking sheet.
  8. Cream together softened butter and cream cheese until smooth, then add powdered sugar and vanilla extract and whip until fluffy.
  9. Finely crush 4 Oreos and mix with 2 tablespoons of cream cheese to form small pieces.
  10. Frost cooled cookies with buttercream and top with Oreo cookie dough bites and rainbow sprinkles.
