Description
A delightful twist on classic fudge, incorporating blueberry flavor for a unique treat.
Ingredients
Scale
- 1/2 cup frozen blueberries
- 2 tablespoons granulated sugar
- 1 tablespoon freshly squeezed lemon juice
- 2½ teaspoons cornstarch
- 3 cups good quality white baking chips
- 1 cup sweetened condensed milk
Instructions
- Line an 8×8 baking dish with parchment paper, ensuring an overhang on two sides for easy removal.
- In a saucepan, combine frozen blueberries, sugar, lemon juice, and cornstarch over medium heat. Simmer while whisking for about 10 minutes until thickened.
- Use a fine-mesh strainer over a bowl to separate the blueberry mixture, pressing the berries to extract the juice. Discard hulls and chill the topping for 1 hour.
- In a microwave-safe bowl, combine white baking chips and sweetened condensed milk. Microwave for 1 minute, then heat in 30-second intervals, stirring until melted and smooth.
- Fold the chilled blueberry topping into the melted fudge mixture gently for a marbled effect.
- Pour the fudge into the baking dish, smooth the top, cover, and chill for 3-4 hours until set.
- Lift the fudge from the pan using parchment overhang and cut into 36 pieces. Keep refrigerated until serving.
Notes
- Store leftovers in the refrigerator.
- Use fresh blueberries for a more intense flavor.
