Description

Crispy and flavorful Buffalo Chicken Taquitos made with tender chicken thighs, a spicy buffalo cream cheese filling, and sharp cheddar cheese, air-fried to perfection for a delicious appetizer or snack.

  • 4 skinless boneless chicken thighs
  • 1 teaspoon sea salt (or to taste)
  • Black pepper (to taste)
  • 2 tablespoons olive oil
  • 1/4 cup buffalo sauce
  • 1/2 cup cream cheese
  • 1 cup sharp cheddar cheese, shredded
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 2 teaspoons ranch seasoning
  • 1/2 cup green onion, sliced
  • 10 small corn tortillas
  • Avocado oil spray (or oil spray of your choice, or use a brush to lightly brush oil over taquitos)

Instructions

  1. Season the chicken thighs on both sides with sea salt and black pepper. Preheat a nonstick skillet with olive oil over medium heat. Add the chicken thighs and cook until golden brown on both sides and fully cooked through, about 10-15 minutes depending on size. Ensure an internal temperature of 165°F is reached. Remove from skillet and transfer to a cutting board.
  2. Cut the cooked chicken thighs into small bite-sized pieces, making them easier to mix and roll into taquitos.
  3. In a large mixing bowl, combine the chopped chicken with buffalo sauce, cream cheese, shredded sharp cheddar cheese, garlic powder, onion powder, smoked paprika, ranch seasoning, and sliced green onions. Mix thoroughly until well combined. Taste and adjust with additional salt and pepper if needed.
  4. Using an ice cream scoop or spoon, portion the filling mixture onto each corn tortilla. Roll each tortilla tightly around the filling to form a taquito.
  5. Line the air fryer basket or pan with parchment paper. Place rolled taquitos in a single layer and lightly spray or brush them with avocado oil or your preferred oil spray. Air fry at 400°F for 4-5 minutes on each side, totaling 8-10 minutes, until crispy and golden brown.
