Description

A foolproof, irresistible family meal combining Mexican flavors and Italian comfort, perfect for weeknight dinners.


Ingredients

  • 1 lb ground beef
  • 2024 oz cheese tortellini
  • 1 jar (15–19 oz) enchilada sauce
  • 2 cups shredded cheese (cheddar and Monterey Jack)
  • 1 bell pepper, diced
  • 1 onion, diced
  • 12 tbsp olive oil
  • 1 tbsp taco seasoning
  • Salt and pepper to taste
  • Cilantro and lime for garnish

Instructions

  1. Bring a large pot of salted water to a boil, add tortellini, and cook until al dente (3-5 minutes). Drain and set aside.
  2. In a skillet, heat olive oil over medium heat, add ground beef, and cook until browned (6-8 minutes).
  3. Add diced onion and bell pepper, cooking until softened (3–4 minutes).
  4. Stir in taco seasoning, salt, and pepper, mixing well.
  5. Combine cooked tortellini with the beef mixture and pour in enchilada sauce. Stir until well coated.
  6. Remove from heat and mix in half of the shredded cheese until melted.
  7. Transfer the mixture to a greased baking dish and top with the remaining cheese.
  8. Bake in a preheated oven at 350°F (175°C) for 15-20 minutes, until cheese is bubbly and golden.
  9. Let rest for 5 minutes before garnishing with cilantro and lime juice.

Notes

Feel free to swap ground beef for ground turkey or plant-based alternatives. Customize with your choice of vegetables and cheeses.
