- 1 lb ground beef
- 20–24 oz cheese tortellini
- 1 jar (15–19 oz) enchilada sauce
- 2 cups shredded cheese (cheddar and Monterey Jack)
- 1 bell pepper, diced
- 1 onion, diced
- 1–2 tbsp olive oil
- 1 tbsp taco seasoning
- Salt and pepper to taste
- Cilantro and lime for garnish
Instructions
- Bring a large pot of salted water to a boil, add tortellini, and cook until al dente (3-5 minutes). Drain and set aside.
- In a skillet, heat olive oil over medium heat, add ground beef, and cook until browned (6-8 minutes).
- Add diced onion and bell pepper, cooking until softened (3–4 minutes).
- Stir in taco seasoning, salt, and pepper, mixing well.
- Combine cooked tortellini with the beef mixture and pour in enchilada sauce. Stir until well coated.
- Remove from heat and mix in half of the shredded cheese until melted.
- Transfer the mixture to a greased baking dish and top with the remaining cheese.
- Bake in a preheated oven at 350°F (175°C) for 15-20 minutes, until cheese is bubbly and golden.
- Let rest for 5 minutes before garnishing with cilantro and lime juice.
Notes
Feel free to swap ground beef for ground turkey or plant-based alternatives. Customize with your choice of vegetables and cheeses.
