- 2 cups finely chopped pecans
- 1/2 cup bourbon
- 1 cup finely chopped maraschino cherries
- 1/2 cup butter, softened
- 2 cups powdered sugar
- 1 cup semi-sweet chocolate chips
- 1 tablespoon shortening or coconut oil
- 12 pieces candied cherry halves
Instructions
- Combine the finely chopped pecans and bourbon in a bowl. Let the mixture sit at least 1 hour or overnight.
- Beat the softened butter in a large bowl using a hand-held electric mixer. Gradually add powdered sugar, mixing until smooth and fluffy.
- Stir in the pecan-bourbon mixture and chopped maraschino cherries. Mix thoroughly until evenly distributed.
- Shape the mixture into 1-inch balls. Cover with plastic wrap and refrigerate for at least 1 hour.
- Melt the semi-sweet chocolate chips along with shortening or coconut oil in a medium saucepan over low heat.
- Coat the chilled balls in the melted chocolate using two forks or a toothpick. Place them on a parchment paper-lined baking sheet and press a half candied cherry on top.
- Refrigerate the coated balls until the chocolate is completely set, usually takes about 30 minutes.
