- 2 cups cooked chicken, shredded
- 2 tablespoons unsalted butter
- 1 medium onion, chopped
- 1 cup carrots, diced
- 1 cup peas (frozen or fresh)
- 1 cup corn kernels (fresh or frozen)
- 2 cloves garlic, minced
- 1 ½ cups chicken broth
- ½ cup heavy cream
- 1 teaspoon dried thyme
- ½ teaspoon dried rosemary
- Salt and pepper, to taste
- 1 ¾ cups all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon sugar
- 1 teaspoon salt
- 6 tablespoons unsalted butter, cold and cut into cubes
- ¾ cup whole milk
- 1 tablespoon fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish with butter or cooking spray.
- In a large skillet, melt the butter over medium heat. Add the onion, carrots, and garlic. Cook for 5-7 minutes, stirring occasionally, until the vegetables soften. Add the peas, corn, chicken broth, heavy cream, thyme, rosemary, salt, and pepper. Bring to a simmer and cook for 10 minutes, until the sauce thickens and vegetables are tender. Stir in the shredded chicken and transfer the mixture to the prepared baking dish.
- In a medium bowl, combine the flour, baking powder, sugar, and salt. Cut in the cold butter until the mixture resembles coarse crumbs. Add the milk and stir until just combined, being careful not to overwork the dough.
- Spoon dollops of the biscuit dough over the chicken filling, covering as much of the filling as possible. Don’t worry if it doesn’t completely cover the filling.
- Place the baking dish in the oven and bake for 30-35 minutes, or until the biscuit topping is golden brown and cooked through. You can test the biscuits by inserting a toothpick.
- Let the cobbler cool for 5-10 minutes before serving.
