Description

A comforting Chicken Dumpling Soup with chicken, vegetables, and fluffy dumplings in a creamy broth.


Ingredients

  • 3 tablespoons unsalted butter
  • 1 small yellow onion (minced)
  • 2 stalks celery (finely chopped)
  • 1 teaspoon minced garlic
  • ¼ cup all purpose flour
  • ½ cup dry white wine
  • 6 cups low-sodium chicken stock
  • 2 large carrots (peeled and cut into slices)
  • 3 medium Yukon gold potatoes (peeled and cut into 1 inch cubes)
  • 1 bay leaf
  • 2 sprigs fresh thyme (or ½ teaspoon dried thyme leaves)
  • 1 teaspoon seasoned salt
  • ½ teaspoon black pepper
  • 3 cups shredded cooked chicken
  • 1 cup frozen peas
  • ½ cup heavy cream or whole milk
  • 2 cups all-purpose flour
  • 1 teaspoon kosher salt
  • 1 tablespoon baking powder
  • 3 tablespoons unsalted butter (melted)
  • ¾ cup milk

Instructions

  1. Melt 3 tablespoons unsalted butter in a dutch oven over medium-low heat. Add onion and celery; sauté until softened, about 5-7 minutes. Stir in garlic and cook for 30 seconds.
  2. Mix in ¼ cup all purpose flour and cook for 1 minute.
  3. Add ½ cup dry white wine, increase heat to medium-high, and simmer for 2 minutes.
  4. Add 6 cups chicken stock, sliced carrots, cubed potatoes, bay leaf, thyme, seasoned salt, and black pepper. Stir to combine.
  5. Bring to a boil, then reduce heat to low and simmer for 10-12 minutes until potatoes are tender.
  6. Prepare dumplings in a bowl by mixing 2 cups flour, kosher salt, and baking powder. Make a well and add ¾ cup milk and melted butter. Stir until combined.
  7. Add shredded chicken, peas, and cream to the soup. Remove bay leaf and thyme.
  8. Bring soup back to a simmer. Spoon ½ tablespoon of dumpling dough on top of soup.
  9. Cover and simmer for 7-10 minutes until dumplings are cooked through.
  10. Serve immediately, garnished with parsley.

Notes

  • This soup can be frozen for later use.
  • Use leftover rotisserie chicken for ease.
