Description

A juicy and flavorful roast chicken infused with lemon and garlic, perfect for family dinners.


Ingredients

  • 1 whole chicken (45 lbs)
  • 2 lemons, halved
  • 1 head of garlic, halved
  • 4 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh thyme for garnish

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Rub the chicken with olive oil, and season generously with salt and pepper.
  3. Stuff the cavity with lemon halves and garlic.
  4. Place the chicken in a roasting pan and roast for 1 hour 15 minutes, or until the internal temperature reaches 165°F (74°C).
  5. Let the chicken rest for 10-15 minutes before carving.
  6. Garnish with fresh thyme and serve.

Notes

For extra flavor, you can brine the chicken overnight. Serve with roasted vegetables or a fresh salad.
