Ingredients

- 1 whole chicken (4–5 lbs)
- 2 lemons, halved
- 1 head of garlic, halved
- 4 tablespoons olive oil
- Salt and pepper to taste
- Fresh thyme for garnish
Instructions
- Preheat the oven to 425°F (220°C).
- Rub the chicken with olive oil, and season generously with salt and pepper.
- Stuff the cavity with lemon halves and garlic.
- Place the chicken in a roasting pan and roast for 1 hour 15 minutes, or until the internal temperature reaches 165°F (74°C).
- Let the chicken rest for 10-15 minutes before carving.
- Garnish with fresh thyme and serve.
Notes
For extra flavor, you can brine the chicken overnight. Serve with roasted vegetables or a fresh salad.
