Description

Warm, tender mini muffins studded with melty chocolate chips, perfect for breakfast or snacks.


Ingredients

Scale
  • 250 g (2 cups) all-purpose flour
  • 150 g (3/4 cup) granulated sugar
  • 2 tsp (8 g) baking powder
  • 1/2 tsp (2 g) baking soda
  • 1/2 tsp (3 g) fine salt
  • 113 g (1/2 cup) unsalted butter, melted and cooled
  • 240 ml (1 cup) whole milk
  • 2 large eggs
  • 2 tsp (10 ml) vanilla extract
  • 180 g (1 cup) semisweet chocolate chips

Instructions

  1. Preheat your oven to 200°C (400°F) and prepare a mini muffin tin.
  2. In a medium bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  3. In a separate bowl, whisk melted butter and milk, then add eggs and vanilla.
  4. Combine dry ingredients into wet, folding gently until just combined.
  5. Toss chocolate chips in a bit of flour and fold them into the batter.
  6. Fill muffin cups 3/4 full and bake for 4 minutes at 200°C (400°F), then reduce temperature to 175°C (350°F) and bake for another 6–8 minutes.
  7. Let cool in the pan for a few minutes, then transfer to a rack.

Notes

To keep muffins from drying out, store in an airtight container. They can also be frozen for longer storage.
