  • 1/4 cup Dutch process cocoa powder
  • 1 cup heavy whipping cream
  • 1/4 cup powdered sugar
  • 2 tablespoons cocoa powder

Instructions

  1. In a stand mixer with a dough hook, combine all dough ingredients and mix until smooth and elastic, about 5 minutes on low speed.
  2. Transfer the dough to a greased bowl, cover, and let it rise in a warm place for 1-2 hours, or until doubled in size.
  3. Punch down the dough and divide it into 8-12 equal pieces. Shape each piece into a smooth ball and place them on a lined baking sheet. Cover and let rise again for 30-60 minutes.
  4. Preheat your oven to 350°F. Brush the tops of the buns with an egg wash.
  5. Bake for 16 minutes, or until they sound hollow when tapped. Cool on a wire rack.
  6. In a mixing bowl, whip the heavy cream with cocoa powder and powdered sugar until medium-stiff peaks form. Chill until ready to use.
  7. Slice each bun in half horizontally, leaving a hinge. Generously fill the center with whipped cream and close gently.
