Description

Ingredients
Scale
- 3 cups all-purpose flour
- 1 cup bread flour
- 1 tablespoon instant yeast
- 1/4 cup granulated sugar
- 1 teaspoon salt
- 1 tablespoon vanilla extract
- 2 large eggs
- 1 cup milk
- 1/4 cup neutral oil or melted butter
- 1/4 cup Dutch process cocoa powder
- 1 cup heavy whipping cream
- 1/4 cup powdered sugar
- 2 tablespoons cocoa powder
- a pinch salt
Instructions
- In a stand mixer with a dough hook, combine all dough ingredients and mix until smooth and elastic, about 5 minutes on low speed.
- Transfer the dough to a greased bowl, cover, and let it rise in a warm place for 1-2 hours, or until doubled in size.
- Punch down the dough and divide it into 8-12 equal pieces. Shape each piece into a smooth ball and place them on a lined baking sheet. Cover and let rise again for 30-60 minutes.
- Preheat your oven to 350°F. Brush the tops of the buns with an egg wash.
- Bake for 16 minutes, or until they sound hollow when tapped. Cool on a wire rack.
- In a mixing bowl, whip the heavy cream with cocoa powder and powdered sugar until medium-stiff peaks form. Chill until ready to use.
- Slice each bun in half horizontally, leaving a hinge. Generously fill the center with whipped cream and close gently.
- Dust with powdered sugar if desired before serving.
Notes
- Sift cocoa powder and powdered sugar before mixing to prevent lumps in the whipped cream filling.
- Use room temperature eggs for better incorporation into the dough, resulting in lighter buns.
- Store unfilled buns at room temperature in an airtight container for up to 2 days.
- Store filled maritozzi in the refrigerator for up to 2 days, loosely covered to prevent sogginess.
- Unfilled buns can be frozen for up to 3 months.
