- 1 small apple, finely diced
- 1/2 cup cottage cheese (full-fat or low-fat)
- 1 large egg
- 1/4 cup flour (oat flour or all-purpose)
- 1 tablespoon honey or maple syrup
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/2 teaspoon baking powder
- 1 teaspoon vanilla extract
- Pinch of salt
Instructions
- Preheat oven to 350°F (175°C). Grease or line a mini muffin tin.
- Whisk cottage cheese, egg, vanilla, and honey/maple syrup until smooth.
- In another bowl, combine flour, baking powder, cinnamon, nutmeg, and salt.
- Fold dry mixture into wet until just combined.
- Stir in finely diced apple pieces.
- Spoon into muffin tin, filling 3/4 full. Bake 15–18 minutes until golden and a toothpick comes out clean.
- Let cool 5 minutes in pan, then transfer to wire rack. Enjoy warm or cooled.

- Pat apples dry if very juicy to avoid soggy bites.
