Description

Ingredients

  • 1 small apple, finely diced
  • 1/2 cup cottage cheese (full-fat or low-fat)
  • 1 large egg
  • 1/4 cup flour (oat flour or all-purpose)
  • 1 tablespoon honey or maple syrup
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/2 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Preheat oven to 350°F (175°C). Grease or line a mini muffin tin.
  2. Whisk cottage cheese, egg, vanilla, and honey/maple syrup until smooth.
  3. In another bowl, combine flour, baking powder, cinnamon, nutmeg, and salt.
  4. Fold dry mixture into wet until just combined.
  5. Stir in finely diced apple pieces.
  6. Spoon into muffin tin, filling 3/4 full. Bake 15–18 minutes until golden and a toothpick comes out clean.
  7. Let cool 5 minutes in pan, then transfer to wire rack. Enjoy warm or cooled.
