Ingredients

  • 3 cloves fresh garlic, minced
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 1 medium zucchini, diced
  • 14 oz canned diced tomatoes (fire-roasted preferred)
  • 6 cups low-sodium chicken broth
  • 2 tsp Italian seasoning
  • ½ cup small pasta shells
  • 2 cups fresh spinach or kale

Instructions

  1. In a large pot over medium heat, drizzle olive oil. Sauté minced garlic until fragrant.
  2. Add diced carrots and celery; cook for about 5 minutes until slightly softened.
  3. Stir in chopped chicken breasts; cook until golden brown.
  4. Pour in chicken broth and canned tomatoes; bring to a boil then reduce heat to simmer.
  5. After 10 minutes, add pasta shells and cook until al dente.
  6. Stir in fresh spinach or kale along with Italian seasoning; let simmer for an additional 5 minutes before serving.
