Ingredients

  • 1 cup green or brown lentils
  • 1 can (14.5 oz) diced tomatoes
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 1 medium yellow onion, chopped
  • 3 cloves garlic, minced
  • 4 cups low-sodium vegetable broth
  • 1 tsp dried thyme
  • 2 bay leaves
  • 2 large russet potatoes, peeled and cut into chunks
  • 4 tbsp butter
  • 1/4 cup heavy cream
  • Salt and pepper to taste

Instructions

  1. In a large pot over medium heat, sauté onions in olive oil until translucent. Add garlic until fragrant.
  2. Stir in carrots, celery, and thyme. Cook until vegetables soften.
  3. Add lentils, broth, diced tomatoes, and bay leaves. Bring to a boil then simmer uncovered for 25-30 minutes until lentils are tender.
  4. Meanwhile, boil potatoes in salted water until fork-tender (15-20 minutes). Drain and mash with butter and cream until smooth.
  5. Remove bay leaves from the stew. Serve hot alongside creamy mashed potatoes.
