Ingredients

- 1 lb smoked sausage, sliced
- 4 medium Yukon Gold potatoes, diced (about 4 cups)
- 1 medium onion, diced
- 3 cloves garlic, minced
- 4 cups low-sodium chicken broth
- 1 cup heavy cream or whole milk
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried thyme
- 1 tbsp fresh parsley, chopped
Instructions
- In a skillet over medium heat, sauté the diced onion until translucent. Add minced garlic and cook until fragrant.
- Transfer sautéed onion and garlic to the crockpot. Add diced potatoes and sliced sausage.
- Pour in chicken broth to cover ingredients. Season with salt, pepper, thyme, and parsley; stir well.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- About 30 minutes before serving, stir in cream or milk and let warm through.
