Instructions
- Preheat your oven to 350°F (175°C) and line a cupcake pan with paper liners.
- In a large bowl, whisk together the flour, granulated sugar, cocoa powder, baking powder, baking soda, and salt until well combined.
- Add the softened butter to the dry ingredients and mix until crumbly.
- In another bowl, whisk together the eggs, vanilla extract, milk, and peppermint extract until well blended.
- Gradually add the wet ingredients to the dry mixture, mixing until just combined.
- Carefully stir in the boiling water until the batter is smooth.
- Pour the batter into the prepared cupcake liners, filling each about 2/3 full.
- Place the cupcake pan in the preheated oven and bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
- Remove the cupcakes from the oven and allow them to cool in the pan for 15 minutes. Then, transfer them to a wire rack to cool completely.
- In a mixing bowl, beat together the powdered sugar, softened butter, heavy cream, and peppermint extract until fluffy and smooth.
- Once the cupcakes are completely cool, frost them generously with the peppermint frosting.
- Sprinkle crushed candy canes on top of the frosted cupcakes for an extra festive touch.
