  • 1 teaspoon peppermint extract

  • 2 tablespoons heavy cream (for frosting)
  • ½ teaspoon peppermint extract (for frosting)
  • Crushed candy canes (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake pan with paper liners.
  2. In a large bowl, whisk together the flour, granulated sugar, cocoa powder, baking powder, baking soda, and salt until well combined.
  3. Add the softened butter to the dry ingredients and mix until crumbly.
  4. In another bowl, whisk together the eggs, vanilla extract, milk, and peppermint extract until well blended.
  5. Gradually add the wet ingredients to the dry mixture, mixing until just combined.
  6. Carefully stir in the boiling water until the batter is smooth.
  7. Pour the batter into the prepared cupcake liners, filling each about 2/3 full.
  8. Place the cupcake pan in the preheated oven and bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  9. Remove the cupcakes from the oven and allow them to cool in the pan for 15 minutes. Then, transfer them to a wire rack to cool completely.
  10. In a mixing bowl, beat together the powdered sugar, softened butter, heavy cream, and peppermint extract until fluffy and smooth.
  11. Once the cupcakes are completely cool, frost them generously with the peppermint frosting.
  12. Sprinkle crushed candy canes on top of the frosted cupcakes for an extra festive touch.
