Description

Ingredients

  • 2 ripe avocados
  • 8 oz spaghetti (or pasta of choice)
  • 2 garlic cloves
  • 2 tbsp lemon juice (freshly squeezed)
  • 2 tbsp extra virgin olive oil
  • ½ cup grated parmesan cheese (or nutritional yeast for vegan option)
  • Salt and pepper to taste

Instructions

  1. Boil salted water in a large pot. Add pasta and cook according to package instructions until al dente.
  2. In a blender or food processor, combine avocados, garlic, lemon juice, olive oil, salt, and pepper. Blend until smooth.
  3. Drain the pasta, reserving some cooking water. Add hot pasta to the blender with the avocado sauce. Mix well, adding reserved water gradually until desired creaminess is achieved.
  4. Fold in grated parmesan cheese (or nutritional yeast) until combined.
  5. Plate immediately with optional garnishes of extra cheese and cracked pepper.
