- 8 oz spaghetti (or pasta of choice)
- 2 garlic cloves
- 2 tbsp lemon juice (freshly squeezed)
- 2 tbsp extra virgin olive oil
- ½ cup grated parmesan cheese (or nutritional yeast for vegan option)
- Salt and pepper to taste
Instructions
- Boil salted water in a large pot. Add pasta and cook according to package instructions until al dente.
- In a blender or food processor, combine avocados, garlic, lemon juice, olive oil, salt, and pepper. Blend until smooth.
- Drain the pasta, reserving some cooking water. Add hot pasta to the blender with the avocado sauce. Mix well, adding reserved water gradually until desired creaminess is achieved.
- Fold in grated parmesan cheese (or nutritional yeast) until combined.
- Plate immediately with optional garnishes of extra cheese and cracked pepper.
