Hearty Creamy Chicken and Potato Soup for Cozy Family Dinners


Ingredients

  • 2 tbsp butter
  • 1 small yellow onion, diced
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 3 cloves garlic, minced
  • ⅓ cup all-purpose flour
  • 6 cups low-sodium chicken broth
  • 2 cups cooked chicken, shredded or diced
  • 3 cups gold potatoes, diced
  • 1 tsp Italian seasoning
  • ½ tsp mustard powder
  • Salt and freshly ground black pepper, to taste
  • 1 cup half and half
  • 1 cup shredded cheddar cheese

Instructions

  1. Melt butter in a large pot over medium heat. Add onions, carrots, and celery, cooking for 5–6 minutes until softened. Stir in garlic and cook 1 minute more.
  2. Sprinkle flour over vegetables and stir for 2 minutes to thicken.
  3. Gradually whisk in chicken broth until smooth, avoiding lumps. Bring to a gentle simmer.
  4. Stir in chicken, potatoes, Italian seasoning, mustard powder, salt, and pepper. Simmer 20–25 minutes until potatoes are tender.
  5. Stir in half and half and shredded cheddar. Warm gently until cheese melts and soup is creamy.
  6. Ladle into bowls and garnish with fresh herbs or extra cheese if desired.
