  • 2 teaspoons Italian seasoning

  • 2 cups fresh spinach, chopped

  • Olive oil for sautéing

Instructions

  1. Heat a drizzle of olive oil in a large pot over medium heat.
  2. Add the Italian beef sausage, breaking it apart with a spatula. Cook until browned, about 5-7 minutes. Remove and set aside.
  3. In the same pot, sauté the diced onion, garlic, carrots, and celery for 5-6 minutes until soft.
