- 2 cups fresh spinach, chopped

Instructions
- Heat a drizzle of olive oil in a large pot over medium heat.
- Add the Italian beef sausage, breaking it apart with a spatula. Cook until browned, about 5-7 minutes. Remove and set aside.
- In the same pot, sauté the diced onion, garlic, carrots, and celery for 5-6 minutes until soft.
- Pour in the chicken broth, scraping up any browned bits from the bottom of the pot.
