  • 1 pound Italian sausage (mild or spicy, according to preference)
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 3 cups chicken broth
  • 2 cups heavy cream
  • 1 cup grated Parmesan cheese
  • 2 cups baby spinach
  • 2 medium carrots, diced
  • 1 cup celery, diced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley for garnish (optional)

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the Italian sausage and cook until browned, breaking it apart with a spoon. Remove the cooked sausage and set aside.
  2. In the same pot, add diced onions, carrots, and celery. Sauté for about 5 minutes, or until the vegetables are tender. Add minced garlic and sauté for an additional minute.
  3. Pour in the chicken broth and bring to a simmer. Scrape the bottom of the pot to incorporate any browned bits for added flavor.
  4. Reduce the heat to low and stir in the heavy cream. Allow the mixture to heat through but do not let it boil.
  5. Return the cooked Italian sausage to the pot. Add dried oregano, thyme, salt, and pepper to taste. Stir well to combine.
  6. Add the baby spinach and allow it to wilt in the soup, which should take about 2-3 minutes.
  7. Stir in the grated Parmesan cheese until it melts and creates a creamy texture.
  8. Taste the soup and adjust the seasonings if necessary. If you prefer a thicker soup, let it simmer for a few extra minutes.
  9. Ladle the soup into bowls and garnish with fresh parsley if desired. Enjoy warm!
