- 1 pound Italian sausage (mild or spicy, according to preference)
- 1 medium onion, diced
- 3 cloves garlic, minced
- 3 cups chicken broth
- 2 cups heavy cream
- 1 cup grated Parmesan cheese
- 2 cups baby spinach
- 2 medium carrots, diced
- 1 cup celery, diced
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh parsley for garnish (optional)
Instructions
- In a large pot, heat olive oil over medium heat. Add the Italian sausage and cook until browned, breaking it apart with a spoon. Remove the cooked sausage and set aside.
- In the same pot, add diced onions, carrots, and celery. Sauté for about 5 minutes, or until the vegetables are tender. Add minced garlic and sauté for an additional minute.
- Pour in the chicken broth and bring to a simmer. Scrape the bottom of the pot to incorporate any browned bits for added flavor.
- Reduce the heat to low and stir in the heavy cream. Allow the mixture to heat through but do not let it boil.
- Return the cooked Italian sausage to the pot. Add dried oregano, thyme, salt, and pepper to taste. Stir well to combine.
- Add the baby spinach and allow it to wilt in the soup, which should take about 2-3 minutes.
- Stir in the grated Parmesan cheese until it melts and creates a creamy texture.
- Taste the soup and adjust the seasonings if necessary. If you prefer a thicker soup, let it simmer for a few extra minutes.
- Ladle the soup into bowls and garnish with fresh parsley if desired. Enjoy warm!
