Description

Crispy Authentic Moo Dad Deaw is a popular Thai snack made from thinly sliced, marinated pork that is then dried or fried until golden and crispy. It offers a delightful balance of savory, sweet, and aromatic flavors, making it a perfect appetizer or snack.

Ingredients

Scale
  • 14 ounces Pork, thinly sliced
  • 1.5 tablespoons Fish Sauce
  • 3 cloves Garlic, minced
  • 1.5 tablespoons Palm Sugar
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Roasted Coriander Seeds
  • 0.5 teaspoon Roasted Cumin Seeds
  • 0.5 teaspoon Roasted Black Peppercorns

Instructions

  1. Roast the spices: Lightly toast the coriander, cumin, and black peppercorns in a dry pan for about 20 seconds until fragrant.
  2. Process the spices: Transfer the toasted spices to a mortar, add the minced garlic, and pound everything into a fine paste.
  3. Marinate the pork: In a bowl, combine the spice paste with palm sugar, fish sauce, and salt. Coat the pork thoroughly and let it marinate for at least 4 hours, or overnight for maximum flavor.
  4. Dehydrate the meat: Sun-dry the marinated pork for 4-12 hours, or use a dehydrator set between 145-160°F for 4-8 hours until it’s firm yet slightly moist.
  5. Cook the pork: Heat oil in a deep fryer or large pot to 350-375°F. Deep-fry the pork for 3-5 minutes until golden brown, or grill until charred and thoroughly cooked.
  6. Serve: Once cooked, drizzle the Moo Dad Deaw with lime juice for an exciting zing. Optional: Serve with sticky rice.

Notes

  • For optimal flavor, marinate the pork for at least 4 hours; overnight is recommended.
  • Store leftovers in an airtight container for freshness.
  • Ensure your fish sauce is gluten-free if required.
  • Lean cuts of pork are ideal for this crispy Moo Dad Deaw recipe.
