Crockpot Sausage and Tortellini Soup is a hearty and comforting dish, perfect for any meal.

- 1 pound Italian sausage (mild or spicy, according to preference)
- 1 medium onion, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 can (14.5 oz) diced tomatoes (with juices)
- 1 cup carrots, sliced
- 1 cup bell pepper, chopped
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1 package (9 oz) cheese tortellini (fresh or frozen)
- 2 cups fresh spinach (or kale)
- ½ cup heavy cream (optional, for a creamy version)
Instructions
- In a skillet over medium heat, cook the Italian sausage until browned. Drain excess fat if necessary.
- Stir in the diced onion and minced garlic, cooking for another 2-3 minutes until the onion softens.
- Transfer the sausage mixture to the crockpot. Add chicken broth, diced tomatoes, carrots, bell pepper, Italian seasoning, salt, and pepper. Stir well to combine.
- Cover and cook on low for 4-6 hours or on high for 2-3 hours.
- About 30 minutes before serving, stir in the tortellini. If using frozen tortellini, no need to thaw.
- During the last 10 minutes of cooking, add the fresh spinach (or kale) and stir until wilted.
- If desired, stir in heavy cream just before serving for a richer flavor.
- Taste the soup and adjust seasonings if necessary.
- Ladle into bowls and enjoy your comforting soup!

- Freezing is possible, but the tortellini may change texture.
