Description

Creamy, cheesy potatoes slow-cooked to tender perfection. Ideal as a comforting side dish for BBQ or grilled meats, packed with rich flavor and easy prep.


Ingredients

  • 3 to 4 lb potatoes (peeled and diced)
  • 1 cup sour cream
  • 1 can (10.5 oz condensed cream of chicken soup)
  • 1 cup shredded cheddar cheese
  • 1/2 cup milk
  • 1 small onion (finely chopped)
  • 2 to 3 garlic cloves (minced)
  • Salt and freshly ground black pepper (to taste)
  • Optional: chopped green onions or parsley for garnish

Instructions

  1. Place diced potatoes in the bottom of the crockpot.
  2. In a bowl, combine sour cream, condensed cream of chicken soup, milk, chopped onion, minced garlic, salt, and pepper; stir until smooth.
  3. Pour the sauce mixture over the potatoes and gently stir to coat evenly.
  4. Cover and cook on low for 6 to 7 hours or on high for 3 to 4 hours until potatoes are tender.
  5. About 15 to 20 minutes before serving, sprinkle shredded cheddar cheese over the top; cover and cook until melted and bubbly.
  6. Gently stir to combine cheesy potatoes and garnish with chopped green onions or parsley if desired; serve warm.
