A hearty and satisfying vegetable lasagna layered with spinach, ricotta, and marinara sauce.
Ingredients

- 9 lasagna noodles
- 2 cups ricotta cheese
- 2 cups shredded mozzarella cheese
- 1 cup grated Parmesan cheese
- 2 cups fresh spinach
- 1 zucchini, sliced
- 1 bell pepper, chopped
- 2 cups marinara sauce
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Cook the lasagna noodles according to package instructions.
- In a skillet, heat the olive oil over medium heat. Add zucchini and bell pepper, and sauté until tender.
- Mix the ricotta cheese with salt, pepper, and spinach in a bowl.
- Spread a layer of marinara sauce in the bottom of a baking dish.
- Layer 3 lasagna noodles over the sauce, then top with half the ricotta mixture, half the sautéed vegetables, and a third of the mozzarella cheese.
- Repeat the layers, finishing with noodles and remaining marinara sauce. Top with remaining mozzarella and Parmesan cheese.
- Bake for 45 minutes or until golden and bubbly.
- Let it sit for 10 minutes before slicing and serving.
