Description

A hearty and satisfying vegetable lasagna layered with spinach, ricotta, and marinara sauce.


Ingredients

  • 9 lasagna noodles
  • 2 cups ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 2 cups fresh spinach
  • 1 zucchini, sliced
  • 1 bell pepper, chopped
  • 2 cups marinara sauce
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the lasagna noodles according to package instructions.
  3. In a skillet, heat the olive oil over medium heat. Add zucchini and bell pepper, and sauté until tender.
  4. Mix the ricotta cheese with salt, pepper, and spinach in a bowl.
  5. Spread a layer of marinara sauce in the bottom of a baking dish.
  6. Layer 3 lasagna noodles over the sauce, then top with half the ricotta mixture, half the sautéed vegetables, and a third of the mozzarella cheese.
  7. Repeat the layers, finishing with noodles and remaining marinara sauce. Top with remaining mozzarella and Parmesan cheese.
  8. Bake for 45 minutes or until golden and bubbly.
  9. Let it sit for 10 minutes before slicing and serving.
