- 2/3 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 cup chocolate chips
- 1 cup chopped nuts (optional: almonds, pecans, or walnuts)
- Pinch of salt
- Mini chocolate chips
- White chocolate chips
- Chopped dark chocolate
- Crushed peppermint
- Dried cranberries
- Instant espresso powder
- Coconut flakes
Instructions
- Preheat your oven to 350°F (175°C) so it warms before turning it off.
- In a clean, dry bowl, beat egg whites until soft peaks form.
- Increase mixer speed and add sugar gradually until stiff peaks form.
- Fold in vanilla extract and a pinch of salt gently.
- Gently fold in chocolate chips and nuts without deflating the mixture.
- Drop spoonfuls of batter onto a parchment-lined baking sheet.
- Place the sheet inside, close the door, and immediately turn off the oven.
- Leave cookies inside the cooling oven for 6 hours or overnight.
- Remove cookies in the morning and enjoy their crisp, airy texture.
