Ingredients

  • 2/3 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 cup chocolate chips
  • 1 cup chopped nuts (optional: almonds, pecans, or walnuts)
  • Pinch of salt
  • Mini chocolate chips
  • White chocolate chips
  • Chopped dark chocolate
  • Crushed peppermint
  • Dried cranberries
  • Instant espresso powder
  • Coconut flakes

Instructions

  1. Preheat your oven to 350°F (175°C) so it warms before turning it off.
  2. In a clean, dry bowl, beat egg whites until soft peaks form.
  3. Increase mixer speed and add sugar gradually until stiff peaks form.
  4. Fold in vanilla extract and a pinch of salt gently.
  5. Gently fold in chocolate chips and nuts without deflating the mixture.
  6. Drop spoonfuls of batter onto a parchment-lined baking sheet.
  7. Place the sheet inside, close the door, and immediately turn off the oven.
  8. Leave cookies inside the cooling oven for 6 hours or overnight.
  9. Remove cookies in the morning and enjoy their crisp, airy texture.
