- 1 stick (8 tablespoons) butter
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 cup cocoa powder
- 1 cup all-purpose flour
- 1/2 teaspoon salt
- 1 1/2 cups Rolos, unwrapped
Instructions
- Preheat the oven to 350°F (177°C). Line a 9-inch baking pan with parchment and spray lightly.
- Chill 1½ cups unwrapped Rolos in the fridge for 30–60 minutes.
- Melt the butter in a microwave-safe bowl for about 1 minute, then whisk in cocoa powder until smooth.
- In a separate bowl, whisk together granulated sugar, brown sugar, eggs, and vanilla until pale and creamy.
- Gradually mix the cocoa-butter mixture into the sugar-egg mixture until well combined.
- Gently fold in flour and salt until just mixed; do not overmix.
- Fold in the chilled Rolos until they are evenly distributed within the batter.
- Pour the batter into the prepared pan and bake for 42–50 minutes, checking for doneness early.
- Let the brownies cool in the pan for 10–15 minutes before slicing.
- Optionally, sprinkle with halved Rolos and drizzle with caramel before serving.
Notes
These brownies are best enjoyed at room temperature. If refrigerated, reheat briefly to soften Rolos before serving.
