Description

Indulge in these decadent fudgy brownies loaded with gooey Rolos for a rich chocolate-caramel experience.


Ingredients

  • 1 stick (8 tablespoons) butter
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup cocoa powder
  • 1 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1 1/2 cups Rolos, unwrapped

Instructions

  1. Preheat the oven to 350°F (177°C). Line a 9-inch baking pan with parchment and spray lightly.
  2. Chill 1½ cups unwrapped Rolos in the fridge for 30–60 minutes.
  3. Melt the butter in a microwave-safe bowl for about 1 minute, then whisk in cocoa powder until smooth.
  4. In a separate bowl, whisk together granulated sugar, brown sugar, eggs, and vanilla until pale and creamy.
  5. Gradually mix the cocoa-butter mixture into the sugar-egg mixture until well combined.
  6. Gently fold in flour and salt until just mixed; do not overmix.
  7. Fold in the chilled Rolos until they are evenly distributed within the batter.
  8. Pour the batter into the prepared pan and bake for 42–50 minutes, checking for doneness early.
  9. Let the brownies cool in the pan for 10–15 minutes before slicing.
  10. Optionally, sprinkle with halved Rolos and drizzle with caramel before serving.

Notes

These brownies are best enjoyed at room temperature. If refrigerated, reheat briefly to soften Rolos before serving.
