- 4 salmon fillets (skin on)
- 1 tablespoon olive oil
- Salt and freshly ground black pepper, to taste
- 1 tablespoon fresh thyme leaves
- 1 tablespoon fresh rosemary, finely chopped
- 1 lemon, thinly sliced
- 1 orange, juiced and zested
- 2 tablespoons honey
- 2 tablespoons Dijon mustard
- 1/2 cup heavy cream
- 2 tablespoons butter (for the sauce)
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 400°F (200°C). Pat the salmon fillets dry with paper towels. Drizzle with olive oil, then season with salt, pepper, thyme, and rosemary. Arrange lemon slices on top.
- In a small bowl, whisk together orange juice, lemon zest, honey, and Dijon mustard. Set aside.
- Heat a large oven-safe pan over medium-high heat. Add the salmon fillets, skin-side down, and cook for 2-3 minutes until the skin is crispy. Flip carefully and transfer the pan to the oven. Roast for 8-10 minutes until cooked through.
- While the salmon roasts, melt butter in a small saucepan over medium heat. Add heavy cream and whisk until it thickens, about 3-4 minutes. Season with salt and pepper. Remove from heat.
- Drizzle the citrus glaze over the salmon and let it rest for a few minutes.
- Serve with the creamy sauce and garnish with fresh parsley. Pair with roasted vegetables, mashed potatoes, or a light salad.
