Description

A bold, cheesy, and deeply flavorful Mediterranean-inspired white pizza layered with roasted garlic, creamy ricotta, feta, mozzarella, and fresh spinach.


Ingredients

Scale
  • 1 large pizza dough ball (300–350g, homemade or store-bought)
  • 1 large head garlic
  • 1 tbsp olive oil (plus extra for drizzling)
  • 1 cup fresh baby spinach
  • 3/4 cup ricotta cheese
  • 1/2 cup crumbled feta cheese
  • 1 1/2 cups shredded mozzarella cheese
  • 1/4 tsp dried oregano
  • Salt & freshly cracked pepper, to taste
  • Optional: red pepper flakes for heat

Instructions

  1. Preheat oven to 200°C (400°F). Slice the top off the garlic bulb, drizzle with olive oil, wrap in foil, and roast 35–40 minutes until soft and golden. Squeeze cloves into a bowl and mash.
  2. Roll out pizza dough into a 12-inch round. Place on parchment or a preheated pizza stone.
  3. Spread roasted garlic over dough. Add dollops of ricotta and spread gently. Season with oregano, salt, and pepper.
  4. Layer spinach evenly. Add mozzarella and crumbled feta. Sprinkle red pepper flakes if using.
  5. Bake at 220°C (430°F) for 12–15 minutes until crust is golden and cheese is bubbling.
  6. Rest 2–3 minutes. Drizzle olive oil or add herbs. Slice and enjoy warm.
