Description
A bold, cheesy, and deeply flavorful Mediterranean-inspired white pizza layered with roasted garlic, creamy ricotta, feta, mozzarella, and fresh spinach.

- 1 large pizza dough ball (300–350g, homemade or store-bought)
- 1 large head garlic
- 1 tbsp olive oil (plus extra for drizzling)
- 1 cup fresh baby spinach
- 3/4 cup ricotta cheese
- 1/2 cup crumbled feta cheese
- 1 1/2 cups shredded mozzarella cheese
- 1/4 tsp dried oregano
- Salt & freshly cracked pepper, to taste
- Optional: red pepper flakes for heat
Instructions
- Preheat oven to 200°C (400°F). Slice the top off the garlic bulb, drizzle with olive oil, wrap in foil, and roast 35–40 minutes until soft and golden. Squeeze cloves into a bowl and mash.
- Roll out pizza dough into a 12-inch round. Place on parchment or a preheated pizza stone.
- Spread roasted garlic over dough. Add dollops of ricotta and spread gently. Season with oregano, salt, and pepper.
- Layer spinach evenly. Add mozzarella and crumbled feta. Sprinkle red pepper flakes if using.
- Bake at 220°C (430°F) for 12–15 minutes until crust is golden and cheese is bubbling.
- Rest 2–3 minutes. Drizzle olive oil or add herbs. Slice and enjoy warm.
