Description

A hearty one-pan dish combining savory ground beef with tender sweet potatoes and fresh zucchini, perfect for nutritious and quick weeknight meals.


Ingredients

  • 1 lb ground beef
  • 1 large sweet potato (peeled and cubed)
  • 2 medium zucchinis (diced)
  • 1 small onion (finely chopped)
  • 2 garlic cloves (minced)
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • Salt and freshly ground black pepper (to taste)
  • Fresh parsley (chopped, for garnish)

Instructions

  1. Heat olive oil in a large skillet over medium heat and sauté the chopped onion until softened, about 2 to 3 minutes.
  2. Add minced garlic and cook for 30 seconds until fragrant.
  3. Add ground beef to the skillet, break it up with a spoon, and cook until browned and fully cooked. Drain excess fat if necessary.
  4. Stir in cubed sweet potatoes. Season with smoked paprika, oregano, salt, and pepper. Cover and cook for 8 to 10 minutes, stirring occasionally, until sweet potatoes soften.
  5. Add diced zucchini and cook uncovered for 4 to 5 minutes until zucchini is tender yet slightly crisp and sweet potatoes are fully cooked.
  6. Remove from heat, garnish with fresh parsley, and serve warm.
