- 1 lb ground beef
- 1 large sweet potato (peeled and cubed)
- 2 medium zucchinis (diced)
- 1 small onion (finely chopped)
- 2 garlic cloves (minced)
- 2 tbsp olive oil
- 1 tsp smoked paprika
- 1 tsp dried oregano
- Salt and freshly ground black pepper (to taste)
- Fresh parsley (chopped, for garnish)
Instructions
- Heat olive oil in a large skillet over medium heat and sauté the chopped onion until softened, about 2 to 3 minutes.
- Add minced garlic and cook for 30 seconds until fragrant.
- Add ground beef to the skillet, break it up with a spoon, and cook until browned and fully cooked. Drain excess fat if necessary.
- Stir in cubed sweet potatoes. Season with smoked paprika, oregano, salt, and pepper. Cover and cook for 8 to 10 minutes, stirring occasionally, until sweet potatoes soften.
- Add diced zucchini and cook uncovered for 4 to 5 minutes until zucchini is tender yet slightly crisp and sweet potatoes are fully cooked.
- Remove from heat, garnish with fresh parsley, and serve warm.
