  • 1 package (about 9 oz) cheese tortellini

Instructions

  1. In a large pot, heat a drizzle of olive oil over medium heat. Add the Italian sausage, breaking it up with a spoon. Cook until browned, about 5-7 minutes.
  2. Add the diced onion and minced garlic to the pot. Sauté for 3-4 minutes, or until the onion is translucent.
  3. Pour in the chicken broth and add the can of diced tomatoes (with juices). Stir to combine.
  4. Add the sliced carrots and diced zucchini to the pot. Bring the mixture to a simmer.
  5. Stir in the Italian seasoning, along with salt and pepper to taste. Allow the soup to simmer for about 10 minutes.
