- 1 medium onion, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 can (14.5 oz) diced tomatoes, undrained
- 1 cup carrots, sliced
- 1 cup zucchini, diced
- 1 cup fresh spinach (or kale)
- 1 package (about 9 oz) cheese tortellini
- 2 teaspoons Italian seasoning
- Salt and pepper, to taste
- Olive oil, for sautéing
- Grated Parmesan cheese, for serving (optional)
Instructions
- In a large pot, heat a drizzle of olive oil over medium heat. Add the Italian sausage, breaking it up with a spoon. Cook until browned, about 5-7 minutes.
- Add the diced onion and minced garlic to the pot. Sauté for 3-4 minutes, or until the onion is translucent.
- Pour in the chicken broth and add the can of diced tomatoes (with juices). Stir to combine.
- Add the sliced carrots and diced zucchini to the pot. Bring the mixture to a simmer.
- Stir in the Italian seasoning, along with salt and pepper to taste. Allow the soup to simmer for about 10 minutes.
- Add the tortellini to the pot and cook according to package instructions, usually about 3-5 minutes, until they float to the top.
- Stir in the fresh spinach (or kale) and let it wilt for about 2 minutes.
- Sample the soup and adjust seasoning if necessary.
- Ladle the soup into bowls and sprinkle with grated Parmesan cheese if desired.
