- 3/4 cup (150g) brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups (190g) all-purpose flour

- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 1/4 cup (60ml) milk
- 1 cup (150g) mixed dried fruit (raisins, cranberries, cherries, apricots)
- 1/2 cup (60g) chopped nuts (optional – walnuts or pecans)
- 1/2 cup (60g) powdered sugar
- 1 tablespoon milk
- 1/4 teaspoon vanilla extract
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan and line it with parchment paper.
- In a large bowl, cream butter and brown sugar until light and fluffy.
- Beat in eggs one at a time, then stir in vanilla extract.
- In a separate bowl, whisk flour, baking powder, cinnamon, nutmeg, and salt.
- Gradually add dry ingredients to the wet mixture, alternating with milk. Mix until just combined.
- Stir in dried fruits and nuts gently until evenly distributed.
- Transfer batter to the loaf pan, smooth the top, and bake 50–60 minutes until a toothpick comes out clean.
- Cool 10 minutes in pan, then remove and cool completely. Mix glaze ingredients and drizzle over loaf if desired.
