Ingredients

- 500 g (4 cups) all-purpose flour
- 350 ml (1 1/2 cups) lukewarm water
- 7 g (2 1/4 tsp) active dry yeast
- 10 g (1 3/4 tsp) fine salt
- 15 ml (1 tbsp) olive oil or melted butter (optional)
- 10 g (2 tsp) honey or sugar (optional)
Instructions
- Combine flour, yeast, and salt in a large bowl. Add lukewarm water and olive oil.
- Cover with a towel and let rise for 60–90 minutes until doubled in size.
- Transfer to a floured surface and perform gentle folds to strengthen the dough.
- Shape the dough into a round and proof for 30–45 minutes.
- Preheat oven to 230°C (450°F) with the Dutch oven inside.
- Score the loaf and transfer to the Dutch oven, bake covered for 20 minutes, then uncovered for another 12–15 minutes.
- Cool on a rack for at least 1 hour before slicing.
Notes
For a crisper crust, bake uncovered for the last 10 minutes. This loaf can be made ahead and refrigerated overnight after the first rise.
