- 1 cup Arborio rice
- 1 lb shrimp, peeled and deveined
- ½ tsp saffron threads
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- ½ cup dry white wine
- 4 cups warm chicken broth
- ½ cup grated Parmesan cheese
- 2 tbsp butter (plus 1 for finishing)
- 2 tbsp fresh parsley, chopped
Instructions
- In a large skillet over medium heat, melt 2 tablespoons of butter. Add the chopped onion and sauté until translucent, about 5 minutes. Stir in minced garlic and cook until fragrant.
- Add the Arborio rice to the skillet and toast for about 2 minutes.
- Pour in the white wine and saffron dissolved in warm water; stir continuously until most liquid absorbs.
- Gradually add warm chicken broth one ladle at a time, stirring constantly. Wait for each addition to absorb before adding more—this should take about 20 minutes.
- When the rice is nearly al dente, stir in the shrimp and cook until they turn pink, approximately 3-4 minutes. Mix in Parmesan cheese until creamy.
- Remove from heat, stir in an additional tablespoon of butter and chopped parsley. Let sit a few minutes before serving.
