Air fryer chicken curry is a comforting and flavorful dish that combines tender chicken pieces with a rich, aromatic sauce.

- 3–4 boneless, skinless chicken breasts (about 1.5 lbs)
- 4 cloves fresh garlic, minced
- 1 medium onion, sliced thinly
- 2 tbsp curry powder
- 1 cup full-fat coconut milk
- 1 tbsp vegetable oil
- Salt & pepper to taste
- Fresh cilantro (optional, for garnish)
Instructions
- Chop chicken into bite-sized pieces.
- Preheat air fryer to 360°F (182°C). In a bowl, combine chicken, oil, garlic, and onion; toss well.
- Add curry powder, salt, and pepper; mix thoroughly to coat chicken.
- Stir in coconut milk until well combined.
- Transfer mixture to air fryer basket and cook for 12-15 minutes or until chicken is fully cooked.
- Garnish with cilantro and serve hot over rice or with naan.
