- 4 bone-in, skin-on chicken thighs
- 1 cup chicken broth
- 1 cup heavy cream

- Preheat your oven to 375°F (190°C).
- In a large oven-safe skillet, heat olive oil over medium-high heat. Season the chicken thighs with salt, pepper, and paprika. Sear the chicken skin-side down until golden brown, about 5-7 minutes. Flip and brown the other side for another 5 minutes.

- In the same skillet, add diced onion and sauté until translucent, about 3-4 minutes. Stir in minced garlic and cook for an additional 1 minute.
- Sprinkle flour over the onions and garlic, stirring to combine. Gradually pour in the chicken broth and heavy cream, whisking until smooth. Add thyme, salt, and pepper. Let the mixture simmer for 2-3 minutes until slightly thickened.
- Place the chicken thighs back into the skillet, skin-side up, ensuring they are nestled in the gravy.
- Transfer the skillet to the preheated oven. Bake for 45 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
- Remove from the oven and let it rest for a few minutes. Garnish with freshly chopped parsley before serving.
