- 1 cup low-sodium chicken broth
- 2 tsp olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a large skillet over medium-high heat. Season the chicken with salt and pepper, then sauté until golden brown (6-7 minutes per side). Remove and set aside.
- In the same skillet, add chopped onion and minced garlic; sauté until onions are translucent.
- Add the gnocchi and fresh spinach into the skillet, stirring gently.
- Pour in heavy cream and chicken broth; stir well and simmer for about 3-5 minutes until slightly thickened.
- Stir in shredded mozzarella cheese until melted and well combined.
