  • 3 boneless skinless chicken breasts (about 1.5 lbs)
  • 16 oz store-bought gnocchi
  • 1 cup heavy cream
  • 1.5 cups shredded mozzarella cheese
  • 2 cups fresh spinach
  • 3 cloves garlic (minced)
  • 1 medium onion (chopped)
  • 1 cup low-sodium chicken broth
  • 2 tsp olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Season the chicken with salt and pepper, then sauté until golden brown (6-7 minutes per side). Remove and set aside.
  2. In the same skillet, add chopped onion and minced garlic; sauté until onions are translucent.
  3. Add the gnocchi and fresh spinach into the skillet, stirring gently.
  4. Pour in heavy cream and chicken broth; stir well and simmer for about 3-5 minutes until slightly thickened.
  5. Stir in shredded mozzarella cheese until melted and well combined.
  6. Serve immediately, garnished with extra cheese if desired.
