- 1 can (14.5 oz) fire-roasted diced tomatoes
- 1 can (15 oz) kidney beans, rinsed
- 1 cup Guinness Stout
- 2 tbsp chili powder
- 1 tsp cumin
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat. Sauté onions and bell peppers until softened (about 5 minutes).
- Add minced garlic and ground beef; cook until browned and crumbled.
- Stir in chili powder and cumin, then add canned tomatoes.
- Pour in Guinness Stout, scraping any bits from the bottom. Simmer for about 10 minutes.
- Mix in kidney beans with salt and pepper; simmer gently for at least 30 minutes.
- Serve hot with cheese or cilantro as toppings.
