Description

Mediterranean Chicken Gyros with Feta offer a tantalizing burst of flavor with every bite.


Ingredients

  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1/4 cup extra virgin olive oil
  • 1/4 cup fresh lemon juice
  • 4 garlic cloves, minced
  • 2 tsp dried oregano
  • Salt and pepper to taste
  • 4 soft pita breads
  • 1 cup crumbled feta cheese
  • 1 cup diced tomatoes
  • 1 cup diced cucumbers

Instructions

  1. In a bowl, whisk together olive oil, lemon juice, minced garlic, oregano, salt, and pepper. Add chicken breasts, coating them well. Cover and refrigerate for at least 30 minutes.
  2. Heat your grill or skillet over medium-high heat.
  3. Remove chicken from marinade and grill for 6-7 minutes per side until cooked through (internal temperature of 165°F). Let rest.
  4. Warm pitas on the grill or in a skillet until soft.
  5. Slice grilled chicken into strips and place inside warm pita bread with crumbled feta cheese and fresh veggies.
  6. Drizzle tzatziki sauce over the assembled gyros before serving.
