Ingredients

  • 4 boneless, skinless chicken breasts (1.5 lbs)
  • 4 cloves fresh garlic, minced
  • 1 cup pepperoncini peppers, sliced (jarred in brine)
  • 1 cup heavy cream
  • 1 cup low-sodium chicken broth
  • 1/2 cup freshly grated Parmesan cheese
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Season chicken breasts with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Sear chicken until golden brown, about 5 minutes per side.
  2. Add minced garlic when flipping the chicken; sauté for 30 seconds until fragrant.
  3. Pour in chicken broth and add pepperoncini peppers and some brine. Simmer gently while scraping up any browned bits.
  4. Lower heat and stir in heavy cream and Parmesan cheese, allowing the sauce to thicken for about 3-5 minutes.
  5. Return the chicken to the skillet, spoon sauce over it, and simmer for an additional 5-7 minutes until cooked through (165°F internal temperature).
