- 4 cloves fresh garlic, minced
- 1 cup pepperoncini peppers, sliced (jarred in brine)
- 1 cup heavy cream
- 1 cup low-sodium chicken broth
- 1/2 cup freshly grated Parmesan cheese
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Season chicken breasts with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Sear chicken until golden brown, about 5 minutes per side.
- Add minced garlic when flipping the chicken; sauté for 30 seconds until fragrant.
- Pour in chicken broth and add pepperoncini peppers and some brine. Simmer gently while scraping up any browned bits.
- Lower heat and stir in heavy cream and Parmesan cheese, allowing the sauce to thicken for about 3-5 minutes.
- Return the chicken to the skillet, spoon sauce over it, and simmer for an additional 5-7 minutes until cooked through (165°F internal temperature).
