Description

Slow Cooker Cowboy Casserole is the ultimate comfort dish that combines ground beef, beans, and corn under melted cheese.


Ingredients

  • 1 lb lean ground beef
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (14.5 oz) fire-roasted diced tomatoes
  • 1 medium onion, chopped
  • 2 cups shredded cheddar and Monterey Jack cheese
  • 2 bell peppers, chopped
  • 2 tbsp taco seasoning

Instructions

  1. In a skillet over medium heat, brown the ground beef until fully cooked; drain excess grease.
  2. Add chopped onion and bell peppers to the skillet; sauté until tender (about 5 minutes).
  3. Transfer beef and vegetables to the slow cooker. Stir in black beans, corn, diced tomatoes, and taco seasoning until well combined.
  4. Layer shredded cheese on top of the mixture.
  5. Cover and cook on low for 6-8 hours or high for 3-4 hours until bubbly.
  6. Stir before serving into bowls and enjoy!
