- 1 lb lean ground beef
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (14.5 oz) fire-roasted diced tomatoes
- 1 medium onion, chopped
- 2 cups shredded cheddar and Monterey Jack cheese
- 2 bell peppers, chopped
- 2 tbsp taco seasoning
Instructions
- In a skillet over medium heat, brown the ground beef until fully cooked; drain excess grease.
- Add chopped onion and bell peppers to the skillet; sauté until tender (about 5 minutes).
- Transfer beef and vegetables to the slow cooker. Stir in black beans, corn, diced tomatoes, and taco seasoning until well combined.
- Layer shredded cheese on top of the mixture.
- Cover and cook on low for 6-8 hours or high for 3-4 hours until bubbly.
- Stir before serving into bowls and enjoy!
