- 2 cups fresh spinach
- 1 cup dried cranberries

- 3 cloves garlic, minced
- 1 cup low-sodium chicken broth

- ½ cup crumbled feta cheese (optional)
Instructions
- Preheat the oven to 375°F (190°C) and lightly grease a baking dish.
- Heat the olive oil in a large skillet over medium heat. Season the chicken breasts with salt and pepper, then add them to the skillet.
- Sauté until golden brown on one side (about 5 minutes), then flip the chicken. Add the minced garlic and cook until fragrant (about 30 seconds).
- Stir in the fresh spinach and dried cranberries, cooking until the spinach wilts.
- Pour chicken broth around the chicken, transfer everything to the baking dish, and cover with foil.
- Bake for 25-30 minutes or until chicken reaches an internal temperature of 165°F (74°C). Remove foil during the last 5 minutes for browning.
