Instructions
- Heat olive oil in a large soup pot over medium heat. Add diced onion and cook 3–4 minutes. Add garlic, crushed red pepper flakes, Italian seasoning, salt, and black pepper. Cook 1–2 minutes until fragrant.
- Stir in chopped sun-dried tomatoes, then pour in the chicken broth. Bring to a gentle boil.
- Place chicken breasts in the pot. Cover and simmer 20–25 minutes until tender.
- Remove chicken, shred with two forks, and return to the soup.
- Lower heat and stir in heavy cream and parmesan until melted and smooth. Simmer 5 minutes.
- Stir in chopped spinach and cook 1–2 minutes until wilted.
- Adjust seasoning as needed. Serve hot with optional pasta, rice, or crusty bread.
