Description

This vibrant bowl combines juicy seasoned chicken, fresh veggies, and tangy feta with a zesty lemon dressing for a wholesome, flavorful Mediterranean-inspired meal.


Ingredients

  • 1 lb chicken breast or thighs (diced or sliced)
  • 2 tbsp olive oil (plus 3 tbsp for dressing)
  • 12 tsp dried oregano or Italian seasoning
  • Salt and freshly ground black pepper (to taste)
  • 2 cups cooked rice or quinoa
  • 1 cucumber (diced)
  • 1 cup cherry tomatoes (halved)
  • ½ red onion (thinly sliced)
  • 1 cup chickpeas (drained and rinsed)
  • ½ cup crumbled feta cheese
  • Optional: kalamata olives (sliced)
  • 12 tbsp lemon juice
  • 1 garlic clove (minced)
  • 1 tsp Dijon mustard

Instructions

  1. Season the chicken with 2 tablespoons olive oil, oregano or Italian seasoning, salt, and pepper.
  2. Heat a skillet over medium-high heat and cook the chicken until browned and cooked through, about 6–8 minutes. Remove from heat.
  3. Divide cooked rice or quinoa evenly into serving bowls.
  4. Top each bowl with cucumber, cherry tomatoes, red onion, chickpeas, and kalamata olives if using.
  5. Place the cooked chicken on top of the veggies in each bowl.
  6. In a small bowl, whisk together 3 tablespoons olive oil, lemon juice, minced garlic, Dijon mustard, salt, and pepper to make the dressing.
  7. Drizzle the dressing over each bowl, sprinkle with crumbled feta, and serve warm or chilled.
