Description

Mexican Street Corn Chicken is a flavorful dish that combines grilled chicken with a delicious corn mixture.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 cups corn (fresh, frozen, or canned)
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper, to taste
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • Juice of 1 lime
  • 1/2 cup crumbled queso fresco or feta cheese
  • 1/4 cup chopped fresh cilantro
  • Lime wedges, for serving

Instructions

  1. Preheat your grill to medium-high heat or your oven to 400°F (200°C).
  2. Season the chicken breasts with chili powder, cumin, garlic powder, onion powder, salt, and pepper.
  3. Grill the chicken for 6-7 minutes on each side or bake it for 25-30 minutes until the internal temperature reaches 165°F (75°C).
  4. While the chicken cooks, heat olive oil in a skillet over medium heat. Add the corn and cook for about 5-7 minutes until slightly charred.
  5. In a small bowl, mix mayonnaise, sour cream, lime juice, and a pinch of salt until smooth.
  6. Combine the cooked corn with the dressing mixture. Stir in crumbled queso fresco and chopped cilantro.
  7. Transfer the cooked chicken to a serving plate. Top each breast with the corn mixture.
  8. Serve with lime wedges for added flavor.
