- 4 boneless, skinless chicken breasts
- 2 cups corn (fresh, frozen, or canned)
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper, to taste
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- Juice of 1 lime
- 1/2 cup crumbled queso fresco or feta cheese
- 1/4 cup chopped fresh cilantro
- Lime wedges, for serving
Instructions
- Preheat your grill to medium-high heat or your oven to 400°F (200°C).
- Season the chicken breasts with chili powder, cumin, garlic powder, onion powder, salt, and pepper.
- Grill the chicken for 6-7 minutes on each side or bake it for 25-30 minutes until the internal temperature reaches 165°F (75°C).
- While the chicken cooks, heat olive oil in a skillet over medium heat. Add the corn and cook for about 5-7 minutes until slightly charred.
- In a small bowl, mix mayonnaise, sour cream, lime juice, and a pinch of salt until smooth.
- Combine the cooked corn with the dressing mixture. Stir in crumbled queso fresco and chopped cilantro.
- Transfer the cooked chicken to a serving plate. Top each breast with the corn mixture.
- Serve with lime wedges for added flavor.
